SUFFOLK -- Kathy Burket has a couple of philosophies about her business: Don't cry over broken eggs; make jewelry of them. And if people won't eat emu steak, feed 'em emu jerky.
When Burket bought a pair of emus four years ago, she intended to raise and sell breeder pairs. But the bottom fell out of the market, and she was stuck with the big birds that lay lots of huge, avocado-colored eggs.
She had to make a choice: ``Do I get out of this business, or do I market the product?''
To complicate matters, emu meat - promoted as ``the other red meat'' - simply hasn't won acceptance of America's taste buds ...
