Eager to reposition itself as more upscale, Champps Americana recreates its menu.
"When's the last time you got excited about cooking?" The question, smoothly intoned by Executive Chef Andre Halston as a footnote to the message on his answering machine at Champps Americana, was largely rhetorical. But, Halston delightedly relates, "I'd say nine out of 10 of the people who call in actually answer the question! It's great.
