With milk prices plunging near record low levels here, officials with the state agriculture department have found evidence that cheese makers in Wisconsin are using an inexpensive and potentially illegal imported milk protein substitute.
Inspectors are continuing to look for milk protein concentrate (MPC) after an investigation last month found the ingredient in a warehouse at a state cheese plant.
Federal food laws prohibit the use of MPC in standardized cheese, such as Swiss, cheddar or mozzarella. But use of the dry blend of dairy ingredients reportedly has been growing in some Western states and the ingredient is being used extensively in cheese food ...
