The pairing of fish cakes and beans seems to be one of those dreary New England food customs we're supposed to accept with Yankee stoicism. It's a frugal meal, to be sure, but not an inevitable one. Instead of pairing bland fish cakes with blander beans, how about souping up those cakes with herbs and spices, and serving them with a snappy sauce? Or using unexpected fish like fresh salmon or mackerel in place of cod? Or taking them all the way to culinary chic by turning them into crab cakes?
