Feb. 27--JAMESTOWN, N.D. -- Fred Eagleson is getting serious about the buffalo meat business.
"I just want to be diversified and this seemed like a good time to do it," says Eagleson, owner of Dakota Country Meats of Jamestown, N.D., who has long been serious about promoting the lamb industry.
His new "Dakota Country Bison" brand of fresh bison meat will be possible because of economics and equipment, he says.
First, live bison prices have been coming down dramatically in the past two years, while bison meat prices have not, partly because of a pricing strategy ...
