Caring for Traditional Earthenware Pottery

Before using a piece of French earthenware pottery for the first time, wash

it with soap and water, rinse thoroughly, and immerse it in cold water for twelve hours. Soaking the pottery produces hairline cracks all over the glazed surface. The potters say that this initial soaking is necessary to "close the pot's pores," eliminate the aroma of clay, and prevent the pot from absorbing food odors. Let it dry thoroughly before using. After that, you can use and wash it as you would any other handmade ceramic utensil--but always let it dry thoroughly before storing it.
