Q. I've made this pasta dish several times and we all love it, particularly with grilled salmon. But I'm wondering if there is a way to make it a little less rich.
A. Say no more. We want it to taste creamy and rich but without being as rich in calories and fat grams. The sauce starts out with 2 tablespoons of butter and whipping cream. We are cutting out the butter completely. Listen, we've got four types of cheese about to be added ----we don't need the butter. I did blend 2 tablespoons of quick-mixing flour with some low-fat milk, though, to come close to the thickness of whipping cream.
I didn't change the amount of parmesan cheese ----bring it on. ...
