The food industry has to make sure that pathogenic micro-organisms are eliminated but at the same time technologically useful flora need to be preserved.
One way to solve this problem is to make use of a 'clean room' or at least clean room technology whereby specialist air treatment is involved alongside a special air diffusion system and a system for retaining the total 'local' atmosphere.
