Vitamins are natural components in food, usually found in small amounts. They form a distinctly different group of nutrients in the diet from proteins, carbohydrates, and fats. However, vitamins play important roles in interactions with other nutrients.
In general, vitamins are organic compounds that help ensure normal metabolism. They are essential for physiological function, growth, and health. Deficiency syndromes can result if vitamins are present only marginally or completely absent in the diet. Dramatic examples are scurvy from lack of vitamin C; pellagra, from lack of niacin (and protein); and beri-beri, from lack of thiamin.
