Here's a different way to serve cheese at a holiday appetizer party: Heat it.
It doesn't have to be brie baked in puff pastry. Heat cheese alone. In fact, heat three different types of cheeses to be festive, and serve each from a heat-resistant baking dish or surface (like a pizza stone), with a basket of assorted apples, an apple cutter and small knives for spreading the warm cheese.
These cheeses are suggested by the Washington Apple Commission; bake all at 450 degrees:
Cut a 4-ounce wedge of brie or other soft, ripened cheese in half horizontally; place rind side down in a shallow oven-to-table baking dish. Arrange 1 tablespoon ...
