Some very delicious and attractive breads are coming out of bread machines these days instead of those squatty little loaves.
Nothing says a homebaker can't interrupt the machine cycle short of baking and take out the bread dough for a little hands-on creativity. The dough or manual cycle allows you to remove and shape the dough after the kneading cycle.
If your machine does not have a dough cycle, turn the machine off after the first rise and remove the dough for shaping.
