Good chunky chicken salad can even be a last-minute dish for entertaining on busy weekends. Stop by a supermarket deli for a portion of all-white-meat chicken salad, the chunkier the better.

Doctor this to deluxe status at home by folding in halved green seedless grapes, sliced celery, slivered apricots (dried or fresh), toasted pecans or snips of dried, smoked beef like frilly pink ribbons in the salad.
