WALNUT CREEK, Calif._Hannibal Lector has one thing right about fava beans, they do go nicely with Chianti. He is not the first to fall in love with this ancient bean. They have been around for thousands of years and are no less desired today. Fava beans are a favorite of mine_we're like peas in a pod. As soon as they start showing up in the stores, I get to work peeling, blanching, sauteing and pureeing_trying to extract as much of their earthy flavor as possible.
