ONE-PAN CHICKEN DINNERS
CHICKEN WITH ROASTED SPRING VEGETABLES
Toss 3 cups baby carrots, 1 lb. asparagus spears, and 8 whole scallions with 1 Tbs. olive oil, 1/2 tsp. salt, and 1/4 tsp. ground black pepper. Cook chicken according to Roasted Chicken 1-2-3 instructions (below), adding vegetables during last 30 minutes of roasting. Stir vegetables once during cooking.
CHICKEN WITH ROASTED GARLIC AND NEW POTATOES
Toss together 1 1/4 lb. small new potatoes, 1 small red onion cut into eighths, 2 minced garlic cloves, 1 tsp. dried thyme leaves, 3 Tbs. olive oil, 1/2 tsp. salt, and 1/4 tsp. ground black pepper. Place in pan with chicken and ...
