A certain fruit has recently captured the imagination of the city's top pastry chefs. It isn't some exotic Southeast Asian specialty with an unpronounceable name; it isn't even a local favorite with a Yankee pedigree, like Nantucket rhubarb or Vermont blackberries.
It's bananas - the fruit so humble, so basic and common, that it borders on humorous. In some company, the mere mention of bananas can elicit a laugh, but chefs are taking them seriously as never before.
