MONROE -- As California churns out more and more cheese, specialty cheeses become more important to Wisconsin's dairy economy -- and its stature as the nation's Dairyland.
"My biggest market is the West Coast," said Jeff Wideman of the Maple Leaf Cheese Co-op in New Glarus, whose newest cheese is a white cheddar studded with cranberries. "They don't have many specialty cheese makers in California."
