THESE are home-made versions of pain au chocolat with a difference the addition of the ginger and dried fruit (we have used pear, but try using mango or papaya as an alternative) adds an unexpected zest. Croissant dough is available in most supermarkets now.

METHOD

1.Preheat the oven to 200c/400f /gas mark 6. Grease a baking sheet.

2. Unroll the croissant dough on to a flat surface, brush over the ginger syrup and sprinkle over the chopped ginger.
