Now Tillamook standardizes fat and protein in cheese milk
Seasonal variations in milk composition are no longer a factor at Tillamook County Creamery Association, thanks to new technology that allows the Oregon co-op to standardize its cheese milk according to a butterfat-to-protein (F/P) ratio.
Last year, the co-op installed a Foss Food Technology Corp. multicomponent standardizing system -- an infrared analyzer interfaced with a computer for automatic control.
