As the new kids on the block, goat-cheesemakers are finding a ready market
Some new specialty cheese products are designed to get the traditional cheesemaker's goat: They're products like Goat-zarella, Yo-Goat and Hubbardston Blue. And they're on the verge of expansion, processors say.
The new products fit into the growing specialty cheese market, where consumers seem willing to spend more for unusual farm-fresh dairy foods.
