Mark Militello of Mark's Las Olas wins TCI contest
Chef Mark Militello of Mark's Las Olas in Ft. Lauderdale, Fla., won the first-ever U.S. catfish cook-off, showcasing non-fried, quick-and-easy farm-raised catfish recipes. The Catfish Institute sponsored the competition at the 26th annual World Catfish Festival in Belzoni, Miss., last month.
Militello beat out three other contestants with his recipe for Quinoa Crispy U.S. Farm-Raised Catfish with Key Lime Mustard Sauce.
"Catfish lends itself to a variety of flavors," says Militello.
