K.N. Jordan and D.W. Davies studied the influence of various levels of sodium chloride and pH on the growth of a nontoxigenic strain of E. coli O157:H7, particularly in the presence of lactate.
Neither sodium chloride nor lactate had much effect on the growth of E. coli in less acidic conditions of pH 5.5 or 6.0, although lag times to growth were longer as lactate concentration ...
