Article: Sodium Chloride Encourages E. coli Growth Under Acidic Conditions.

2001 JUN 26 - (NewsRx.com & NewsRx.net) --

by N.R. Saltmarsh, staff medical writer - In low-pH conditions, an additive that is normally used to prevent spoilage in food may actually encourage the growth of Escherichia coli O157:H7, researchers in Ireland have found.

K.N. Jordan and D.W. Davies studied the influence of various levels of sodium chloride and pH on the growth of a nontoxigenic strain of E. coli O157:H7, particularly in the presence of lactate.

Neither sodium chloride nor lactate had much effect on the growth of E. coli in less acidic conditions of pH 5.5 or 6.0, although lag times to growth were longer as lactate concentration ...
