Leprino Foods, Roswell, N.M.
Leprino Foods is the largest mozzarella producer in the United States, and its plant in Roswell, N.M., is its largest of 11 Leprino production facilities. Leprino acquired the plant and began operating it in 1994. Growing demand for pre-shredded, individually quick-frozen (IQF) mozzarella pushed a 1995 project, which increased throughput to 4 million lbs. of milk per day.
Over the past 2 1/2 years, various efficiency and capacity projects have increased the plant's cheesemaking capabilities to 6 million lbs of milk per day. Leprino has just completed expanding finished product storage and dry storage, bringing the plant size ...
