THESE delicious little tarts are very simple to make and yet they look and taste very sophisticated. They are perfect as a first course for a summer lunch.

Alternatively, they can be served as a main course with a tomato salad and a few hot new potatoes.

Tiny versions can also be made and served as a canape.

Use the goat's cheese that comes in slices or rolls and has a rind, rather than the creamy variety that comes in a pot.
