Frozen custard keeps coming on as the hottest category in the frozen dessert industry. Growth has been focused on the foodservice side of the business, with older chains expanding into new territories and new chains emerging all over the country. Qualifying as one of the older chains, eleven-year-old Ritter's has just announced a 10-year, 100-unit area development agreement for Southwestern Florida. And Pierre's French Ice Cream company has launched a seven-flavor line under the name Pierre's Authentic Frozen Custard.
