Bold tendrils of smoke curl from a backyard barbecue. Piping hot caramel-colored onions vibrate in a saute pan; another skillet rumbles with browning plantains. A showy whole fish sends up a piercing sizzle, while grill marks form on its exterior, producing pockets of crispy skin around sweet, tender flesh.
Next to the grill, banana leaves are stacked beside some just-picked cactus paddles and a bowl of squash blossoms. An enormous lava-rock mortar (called a molcajete) cradles grill-ready chilies, large and small, in vibrant reds, greens and yellows.
