To many, the oyster is simply a gastronomical indulgence, but there is much more to cultivating the bivalve than meets the plate.
That's evident in "Oyster Culture" by George Matthiessen, president of Ocean Pond Corp., who explains how oysters are cultivated in ponds throughout the world. His focus is intensive oyster culture, involving hands-on husbandry of the shellfish, starting with conception, which involves selecting parent stock, fertilizing eggs and raising the larvae in controlled conditions.
Matthiessen takes much of his information from experience at Ocean Pond, an oyster farm started by his father 40 years ago on Fishers Island, New York.
