After reading John Farquharson's opinion column on food safety (FE&S, March 2001), I felt inspired to add my thoughts to his. First of all, I greatly admire the work being done by John and the International Food Safety Council in spreading the word on food safety education. But how seriously are we, as operators, taking this very important issue? My feeling is, unfortunately, not very.
While all of us dread the notion that someone might get sick after eating at our establishment, we still tend to lull ourselves into a sense of false security. After all, in a place like New York City, literally millions of meals are served on a daily basis, and nobody seems to get ...
