Tips for Making Lean Meats Part of Healthy Diets
Only a decade ago, meat was considered the centerpiece of lunch and dinner across America. Today, growing health concerns and the ever escalating crusade against cholesterol and fat have changed this mealtime picture. In 1976, Americans consumed 94 pounds of beef per person, but by 1987, consumption was 70 pounds per person, a drop of 26 percent. Poultry consumption, on the other hand, has increased as steadily as beef has declined. And fish consumption was increasing until recent fears of possible fish contamination from polluted waters began.
