Sep. 18--Convection ovens, which cook food quickly and evenly with circulating air, are a hot item with restaurants and fast-food outlets.
However, constant pressure from competition and shrinking profit margins in the food service industry have made large, unwieldy convection versions a luxury many businesses can't afford.
Cadco Ltd. is trying to change that.
