Finding the Best Breads
Looked at the back of a bread package lately? Just about every brand features the U.S. Department of Agriculture's Food Guide Pyramid. Bakers love the way that broad base is reserved for the "Bread, Cereal, Rice, & Pasta Group," and can't resist reminding shoppers that the USDA recommends six to 11 servings a day.
What the packages fail to mention is that some breads are better for you than others. (Nor do they explain that those six to 11 servings are tiny: just half a cup of pasta or rice or one modest slice of bread. You'd use up four servings on just one bagel from Dunkin' Donuts or Au Bon Pain.)
