CRUMBLES make the most delicious autumn puddings. They are the ultimate comfort food, but have recently become sophisticated.
The trick to making a crumble is to stir the granulated sugar into the flour once all the fat has been rubbed in - don't mix it all at once.

600g/1 1/4lb rhubarb cut into 1in/2.5cm pieces
