Altered oxygen molecules can eliminate bacteria to improve safety.
While most mariners associate ozone with the fresh-air smell it brings after a thundershower, the gas is also making its way aboard fishing boats as a disinfectant used in processing to combat pathogens such as E. coli, listeria and salmonella.
Using ozone -- an oxygen molecule with three atoms -- to destroy bacteria is nothing new, says Rick Salter, a consultant for the processing equipment company Del Industries of San Luis Obispo, Calif.
