Q. I have a recipe for quick and creamy chicken enchiladas that I've been wanting to make. Can you try it the lower-fat way for me? Thanks so much.
A. If you are expecting traditional chicken enchiladas with red enchilada sauce and corn tortillas, guess again. This one calls for a can of green chiles, cream of mushroom soup, sour cream, chicken, cheddar cheese _ all wrapped up in flour tortillas.
The onions are normally sauteed in a tablespoon of butter, but I just coated a small, nonstick saucepan with canola cooking spray and cut out the butter completely. I used Campbell's Roasted Garlic Cream of Mushroom Soup, which only contains 2.5 grams of fat per ...
