What sort of refreshments should I arrange?

"Lots of people won't have had a chance for breakfast, so you should provide sustenance (coffee and pastries) for them when they arrive," says Lionel Benjamin, director of banqueting at The Savoy. "You then need to organise mineral water for the conference room, a coffee break with biscuits or fresh fruit for midmorning, a lunch and a mid-afternoon tea break, with cakes or fresh fruit. Delegates may not eat everything you provide, but you don't want anyone going away hungry: they wouldn't be very impressed."
