New spin John Hewett, 42, of Bridgend, is executive head chef at one of Cardiff's largest hotels, the Thistle, in Park Place.

I've worked in the London Hilton, in a castle in Ireland and started my own restaurant where I was competing to get a Michelin star.
Owning my own restaurant on the south coast was a very different experience, as you immediately become aware of the financial side of the operation.
