Wild or cultivated, exotic or common, mushrooms add a rich note to cool-weather dishes
They're in the market now: knobby chanterelles, hairy hedgehogs, and broad-capped portabellas with flaring gills. More varieties of mushrooms are being cultivated than ever before. And more wild types, gathered by professional foragers, are making their way to market, giving us access to a wide selection.
