Little cubes of sponge cake, dipped in chocolate, then rolled in coconut. These are lamingtons, an Australian dessert as revered as warm apple pie with vanilla ice cream is here in the States.
Australians serve these cakes with tea in the afternoon. They hold lamington drives to raise money for the church. Bakeries make them bigger and dress them up: I found a lamington the size of a Rubik's Cube made with chocolate cake and filled with champagne cream. Food magazines give lamingtons fresh raspberries. Home bakers have turned them into bars or cookies.
