Today's lesson: The harvest brings unusual bounty to our kitchen in the form of ugly but delicious root vegetables. Today we explore their earthy yet sublime flavors.
What exactly are root vegetables?
We're talking specifically about celery root, parsnips and turnips.
Celery root, or celeriac, is part root and the lower stem of a variety of celery that is grown for its base, not its stalks. It has a nutty, sweet flavor.
Parsnips are cousins to carrot and a taproot like the turnip. They have an earthy, sweet flavor.
Turnips are related to the cabbage and are often found in animal food.
