Dec. 9--Connoisseurs of fine fish will tell you that pickled herring has been especially tasty the last few years.
There's a reason for it, says Roger Dorff, president of Olsen Fish Co. in Minneapolis, the nation's second-largest herring packer. Consumers can partly thank Olsen's neighbor, the Pillsbury Co. (which is now part of General Mills), for that extra bit of freshness and tenderness in the cutlets.
"The government got involved in the fish business like it is in other food industries," Dorff said.
