independent assessmen to top restaurants.But,asks Paul Mungo,why is it so dismissive of British restaurants?

THE influence of the red-bound Michelin Guide on restaurants is overpowering.

As the gastronomic bible of the welltravelled middle classes, it can make or break a chef's reputation.

In France, restaurateurs have gone bankrupt and chefs have commited suicide trying to win an extra star. So next Friday, when the new Guide to Britain is published, there will be a hoo-ha about who is in and who is out.
