Since Sept. 11, a lot has been written about comfort food. Survey after survey tells us that in this time of stress and uncertainty we've turned to what we know, and that includes food. We want foods that remind us of better times; foods that invoke childhood memories of sitting down for dinner in mom's warm kitchen.
Macaroni and cheese hovers at the top of food that we turn to for solace.
"It is the ultimate comfort food ... It goes down easy. Wonderful combination of chewy pasta, creamy cheese and a little bit of crunch on top," says cookbook author Joan Schwarz.
