The sweet potato, like other edible roots, is an ugly duckling. It has a knobby, often contorted torso that tapers at the ends. The skin is dusty, the color of red mud, and bears the scars of having lived underground.
It's nothing a little culinary alchemy can't transform, of course, but the sweet potato is not the prettiest creature found on a grocery display.
We don't talk much about the sweet potato, but it has inspired everything from recipes to songs.
Doesn't a slice of sweet potato pie sound good? No fork, please. Just pick it up with your hand and eat it.
