Wisconsin cheesemakers are investing $150 million to build new facilities or expand existing plants throughout the state, according to Wisconsin Dairy Producers Inc. The growth is aimed at meeting the increased demand for specialty and other value-added cheese products that has come from a growing interest among chefs and consumers in specialty cheeses. Overall, cheese consumption has grown to more than 30 pounds per capital annually; the trend shows no signs of slowing as less-familiar varieties such as Asiago, Gorgonzola, Edam, and Havarti rapidly gain new fans.
