The market for commercial microwave ovens is growing, but operator uses for them have not kept pace. Yet.
Consider the case of Johann Lutsenberger, executive chef for the Westin Hotel, Chicago. He views the microwave oven in his kitchen as a piece of backup equipment. "If a customer wants a really hot bowl of soup or if we need to warm up a roll, we will use it. It is more of an emergency appliance," he says.
