SMOKED MACKEREL FISH CAKES WITH SPINACH
Preparation: 15 minutes. Cooking: 20 minutes. Serves 2-3 HAVE you discovered smoked mackerel? It doesn't look very appetising, hanging, as it does, in its vacuum pack, but its low price tag is very attractive. I tried some the other night on hot buttered toast with lashings of creamed horseradish and plenty of black pepper and lemon juice.
It was so delicious that I gave up on my supper plans and kept going until I'd eaten both fillets.
