IN THE GARDEN AT LAKE AUSTIN SPA RESORT, perched on a sleepy body of water in Texas Hill Country, there's a thicket of lemon balm so citrusy that you'd swear you had happened on a trove of cut lemons. As the delicious aroma wafts toward you, the world drops away and you lose yourself in pleasure.
I had gone to Lake Austin for four days to learn about the care and cultivation of plants, part of the spa's new gardening program. It might seem like an odd fit--gardening generally isn't on the roster of spa offerings--but if a spa's aim is to help you focus on what is beautiful, sensual and meaningful in everyday life, then teaching gardening makes sense.
