When Patty Pensanti recently requested a vegetable lasagna recipe that was printed in this column a couple of years ago several readers came to the rescue. Yvonne Nicholas, Joni Schaper and Heidi Struthoff shared the recipe (the first one that follows) that Pensanti desired, noting that it is delicious. It was sent in by Evelyn Crozier when it originally was featured.
