Evelyn Overton, the Cheesecake Factory Inc.'s founder who started the business by baking pastries in her basement, died in her sleep Wednesday. She was 75.

An officer and director of the Calabasas Hills-based restaurant chain, Overton founded the company in 1972 with her first husband, Oscar. This year, sales are expected to exceed $150 million in combined restaurant and bakery sales.
