Mashed sweet potatoes and banana work the same kind of flavor magic in these custards as pumpkin does in pumpkin pie. The even better news is that there's no crust, less cream and fewer eggs to add fat to this dessert.
Not only are sweet potatoes fat-free, they contribute a fair amount of fiber and more vitamin A than you need in a day.
2 cups mashed, cooked sweet potatoes (3 to 4 medium sweet potatoes)
2/3 cup mashed ripe banana
1 can (12 ounces) (1 1/2 cups) evaporated nonfat milk
1/4 cup packed brown sugar
2 beaten eggs
