The California Department of Food and Agriculture reported recently that the golden state's cheese production grew by 9.8% last year, while the milk supply grew by 3%. Estimates from the department indicate that cheese production hit 1.64 billion lbs in 2001, nearly a 10% jump from 2000. Meanwhile milk and cheese production in the Midwest continue to slow and the possibility of California surpassing Wisconsin in total cheese production is looking more like a reality all the time.
